Oysters with sweet soy and ginger
Preparation 30 min.
Serves 6
Ingredients:
- 18 oysters, shucked
- 18 coriander leaves
- ½ cup deep-fried shallots
Sweet soy and ginger dressing
- 150ml light soy sauce
- 100ml white vinegar
- 100ml water
- 100ml mirin
- Heaped 2/3 cup (100g) white sugar
- 6cm piece ginger, thinly sliced
- 6 red bird's eye chillies, deseeded, sliced
- 4 cloves garlic, finely sliced
Method
To make dressing, place soy, vinegar, water and mirin in a saucepan, bring to a boil, add sugar and stir to dissolve. Add ginger, chilli and garlic, bring back to boil. Remove from heat and set aside to cool.
Arrange oysters on a platter over crushed ice. Spoon dressing over and garnish with coriander and shallots.
