
Recipe: Creamy Salmon Pasta

How delicious is this creamy salmon pasta? Its not only high in protein it is most importantly packed full of delicious flavours! It is sure to be a winner with all the family and perfect for that midweek dinner. You can purchase you fresh salmon at The Fish Stop.
Ingredients
- 2 Salmon Fillets
- 160g Pasta
- 25g Parmesan, finely grated
- 4 tbsp crème fraiche
- 1 Lemon, zest and ½ juiced
- ½ tsp Black Pepper
- Flat-Leaf Parsley, finely chopped
Method
- Heat the oven to 200C/Fan 180C/Gas 6.
- Place salmon fillets skin-side down on a baking-paper-lined tray, season well and put into the oven for 12-15 minutes.
- Cook the pasta and drain. Don’t forget to reserve some of the pasta water.
- In a bowl, mix together the parmesan, crème fraîche, lemon zest and juice, black pepper, ¾ of the parsley.
- Tip the pasta back into the pan with the sauce from the bowl and toss to combine, adding a splash of pasta water to create a sauce.
- Divide between two bowls, flake over the salmon and top with the remaining parsley. Enjoy!
