Recipe: Pan Fried Scallops with Lime and Coriander

6 scallops (Fresh from The Fish Stop, Killybegs)
1 tbsp olive oil
2 garlic cloves, crushed
¼ red chilli
½ tbsp coriander
- Heat the oil in a pan, drop scallops and fry for 1 minute or until golden.
- Turn scallops over and sprinkle crushed garlic and 1 tsp of red chilli and cook for 1 minute then squeeze over the juice of half a lime.
- Finish off with chopped coriander, salt and pepper. Serve immediately.
