LANGOUSTINE (Nephrops norvegicus)
A succulent, white shellfish known variously as the Norway lobster, Dublin Bay prawn, langoustine or scampi, is a slim, orange-pink lobster found in the north-eastern Atlantic Ocean. The meat is more tender than lobster with a rich succulent, sweet note to it. They're about the size of a large prawn but more slender, if you're after a dinner-party dish to impress, Langoustines are quick, a bit showy and totally delicious.
