LING (Molva molva)
An ancient Irish food and part of the Irish heritage, our ling is traditionally salted and cured. Ling is firm, tender and moist, with great texture and large flakes. Our salted ling fillets are nearly boneless and its distinct taste is ideal for simple dishes. Its taste is stronger than that of other codfish but very similar, and its flesh is firm and flaky like that of lobster. A simple combination of mashed potato, fried onion, deep-fried salted ling and parsley, served with lemon mayonnaise makes a simple but absolutely delicious meal.
